I know, I know. Not the season. But since a pear is always an easy sell in my house, it’s ALWAYS in season. I had some people over for dinner last night and wanted to make a light dessert for everyone, so I borrowed a fave from smittenkitchen, who borrowed it from Sally Schneider: Vanilla Roast Pears. So easy! So delicious! So elegant and universally loved by all! And best of all, if there are any leftovers, you can have them for breakfast with plain yogurt or whirled into a smoothie. The how-to: Preheat oven to 375°F. Scrape out the inside of a vanilla pod into 1/3 cup sugar. Peel and halve 4 bosc pears. Scoop out the seeds with a teaspoon measure. Add fruit to a roasting pan, squeeze the juice from one lemon all over, then sprinkle sugar mixture on top. Add dots of butter throughout and roast for 30-40 minutes until brown and bubbly. Serve with vanilla ice cream.
