Lately I’ve been trying to cook all kinds of food on a pizza stone, last week I made a giant cookie which turned out better than anything I had expected. This week I’m throwing all kinds of veggies on there. I don’t know what it is about the pizza stone, but everything turns out flavorful and juicy. I thought I would end up with dried out tasteless sticks, which is why it took me so long to make something other than a pizza on my stone. Here’s my recipe for asparagus even your kids will devour.
Asparagus on a Pizza Stone
1 bunch of Asparagus (or more if you’ve got asparagus lovers)
fresh ground sea salt and pepper
Optional parmesan cheese for sprinkling
Preheat oven to 375 degrees with the pizza stone in the oven. Break the ends off the asparagus and place in a microwave safe, covered dish with a tablespoon of water. cook on high for 1 minute and let sit for another 3 minutes. Drain the water and drizzle with olive oil, sprinkle with 1/4 teaspoon garlic powder and fresh ground salt and pepper to taste. Toss all the ingredients and place on the hot pizza stone and cook for 10 minutes or until tips begin to brown. If you want parmesan cheese, sprinkle over asparagus before placing in the oven.
