Roasted Butternut Squash Cubes with Thyme & Garlic

I love creating comforting recipes with seasonal fruits and vegetables and butternut squash is certainly in season.

However, I do not want them to be loaded with additional sugars as this vegetable has amazing natural sugars that are enhanced with roasting. I present below a very easy recipe that has amazing flavor…..

The best part of roasting the squash is that you can either eat the cubed squash or you can mash it or puree it and mix it with pasta. 

Also, you can make this soup recipe using the roasted cubes but add the squash just after you saute the carrots.

Ingredients:
1 butternut squash, peeled and cut into cubes (~1 to 1.5 inch square)
1 T olive oil
1-2 Tablespoon fresh thyme leaves (or use .5 to 1 Tablespoon dried thyme)
1 T olive oil
2 teaspoons garlic powder (or 1-2 cloves of garlic, chopped)
salt & pepper

Preheat oven 400 degrees. Line a baking pan with unbleached parchment paper or spray with non-stick spray. In small bowl, combine thyme, olive oil, garlic and salt and pepper and mix well. Toss with the squash and bake for 20-25 minutes. You want the squash flesh to be easily pierced with a fork but not mushy.
