Ratatouille is one of the highlights of summer. It’s a very healthy side dish filled with eggplant, squash and fresh bell peppers. It showcases all the fresh vegetables of summer so well. In my family we love a good ratatouille. My favorite way to make it is in the oven. I add all my ingredients for ratatouille to a large non-stick pan and roast in the oven with a few spices and lots of olive oil. Roasting the vegetables brings out their best flavors.
