Roasted Red Pepper Hummus

Hummus is one of my favorite snacks/dips. You can make it in a myriad of flavors but roasted red pepper is by far my favorite. It’s incredibly easy to make and takes just a few minutes whizzing the ingredients around in your food processor and voila you’ll have an incredibly HEALTHY and tasty snack or appetizer. If you’re expecting a crowd, the recipe can be easily doubled.

Pair your Roasted Red Pepper Hummus with slices of vegetables or HOMEMADE PITA CHIPS and you’re all set.

Roasted Red Pepper Hummus
What you’ll need:
15.5 ounces chick peas – drained, rinsed
1-2 garlic cloves
1-2 tablespoons extra virgin olive oil
6 ounces roasted red bell peppers
1 tablespoon tahini paste
1 lime – juiced
salt/pepper

What to do:
1. Into your food processor add: chick peas, garlic {1 if large 2 if small} olive oil, bell peppers, tahini, and lime juice. Season with salt and pepper. Pulse until smooth and creamy. If mixture is too thick add more olive oil.

2. Check for seasoning add more salt/pepper if necessary.
