Roasted Strawberry Lemonade

There is something about lemonade that I can’t get enough of. I seriously could drink it all year round if it was available in the Northeast. One of my favorite things to do in the summer is doctor up my favorite lemonade. I usually add roasted peaches, raspberry ice cubes, or these roasted strawberries. I find that roasting the fruit adds a terrific flavor dimension. The strawberry flavor intensifies and becomes like a thick strawberry syrup.

To make this simple drink I blitz the roasted strawberries in the blender, stirred them into fresh lemonade (it’s okay, you can use store bought if you prefer) and voila, a refreshing beverage was ready!
