Roasted Tomatillo SalsaMacki West
Roasted Tomatillo salsa sounds so gourmet and it’s tastes gourmet too. No one has to know how truly easy this salsa is to make. Actually, it’s probably the easiest salsa to make and goes so perfectly with tacos. The key is to find good tomatillos. A tomatillo looks like a green tomato covered in a greenish/yellow papery husk and if you can’t find them at your grocer, try a latin food store. Peek inside the husk to make sure the tomatillo is firm and bright green. Now you are ready to make your own roasted tomatillo salsa…

Roasted Tomatillo Salsa Recipe
6 medium tomatillos
1 jalapeño (optional)
2 cloves garlic
salt to taste
Preheat oven to 375. Coat the inside of an 8 x 8 baking pan with non stick spray. Place the tomatillos, jalapeño and garlic into the baking dish and roast for 20 minutes or until tops turn dark brown and they begin to burst. Remove from oven and pour the roasted tomatillos, jalapeño and garlic into a glass bowl. Use an immersion blender to puree the ingredients and add salt to cut the tartness. Serve warm or cold.
