Soup. It’s my favorite winter food. A warm cup of soup made from seasonal vegetables seems to make up for the fact that my own vegetable garden is hibernating for the winter. This squash soup recipe was given to me by a friend in the food industry.. Caron Golden. Caron is a wonderful food writer and has her own blog that is focused on foods from her home in San Diego, California. It’s called San Diego Food Stuff and is a great site to add to your RSS feed list.
A couple of years ago, Caron shared this soup recipe with me and I shared it with my readers on my site, Laura’s Best Recipes. It was an instant hit with those who tried it. What makes this soup so wonderful is the simple extra step of roasting the squash. Anytime your roast vegetables or garlic.. or chiles it boosts those natural flavors. Actually, it might be better to say it supercharges those flavors. Try it with just about any recipe and you’ll enjoy the extra flavors.
