Rumble in The New Year with The Potato Volcano

Don’t just ring in the New Year. Rumble it in! The Potato Volcano is a unique creation of Chef David Chang at Momofuku Milk Bar in New York City and it’s just what you need to start 2012 with a blast!


New Year’s Day requires something special and The Potato Volcano is special on so many levels – or should I say layers? Creamy, crunchy Buttermilk Potato Pavé, bacon and caramelized onions all wrapped up in freshly baked bread and filled to the point of exploding with molten Gruyere Mornay Sauce.

Because The Potato Volcano can be quite a production, having a hungry assembly line of friends and family is super handy. Of course you can take a few shortcuts with this recipe. For example, The Potato Volcano can be a great way to use up leftover Potato Gratin. And if you use pre-made pizza dough instead of making the bread from scratch, you’re half-way to eruption.
