As the winter wears on, cooking inspiration can be harder and harder to come by. So I was thrilled to spot a group of colorful vegetables on my last trip to the market, and I instantly knew they were destined for a chicken pot pie. Making a homemade chicken pot pie can be a serious undertaking, but it’s well worth the effort. Our version features some unexpected winter vegetables — purple carrots, golden beets, and rutabagas. Earthy, vivid vegetables pair wonderfully with a rich chicken gravy and a flaky whole wheat crust. So what if it’s not that cold out? You still need to eat.
