Savory Chicken SatayMacki West
Some of my girlfriends and I get together every couple of months for Gourmet Group. We are hardly gourmet, but we love our girls nights and cooking for one another. For our last group my friend Melissa made the most amazing chicken satay. I was begging for the recipe and was shocked at how simple it is, yet has such rich, complex flavors. After I made it at home I was picking at the drippings off the pan and eating them and telling my family it was terrible just so I could have it all to myself. They didn’t buy it!
Savory Chicken Satay Recipe
4 teaspoon or 2 packets of beef bouillon (find a natural one w/o anything hydrogenated)
2 tablespoons of dried minced onion
1 teaspoon onion powder
1/4 cup olive oil
2 tablespoons brown sugar
2 tablespoons healthy peanut butter (no hydrogenated oils!)
1 lb of chicken breasts cut into thin strip
8 skewers soaked in water.
Preheat the oven to 350 degrees F. In a plastic bag combine all of the ingredients (except the skewers). Marinate in the refrigerator for at least 30 minutes. Spray a baking sheet with cooking spray. Remove the chicken from the fridge and skewer the chicken. I scooped out the extra sauce and spread it onto the chicken. Cook for 20 minutes or until internal temp reaches 165 degrees F. Serves 6.
