Shortcut Blueberry Cobbler

Today is the premiere of The Smurfs movie. I grew up with and adored The Smurfs, so naturally we’ve been eagerly awaiting this movie. In honor of the premiere we’ve prepared a few BLUE recipes. We shared our BLUEBERRY COBBLER SMOOTHIE earlier this week, now we’re sharing our shortcut blueberry cobbler recipe. It’s quick, easy and delicious. If you prefer, you can also make this into individual servings by baking it in ramekins.

Shortcut Blueberry Cobbler
What you’ll need:
21 ounces blueberry pie filling
1 cup fresh blueberries
1 cup bisquick pancake and baking mix
1/4 cup milk
2 tablespoons sugar
1 tablespoon melted butter

What to do:
1. Preheat oven to 400 degrees. Spray an 1.8 liter oven proof dish with cooking spray. Pour blueberry pie filling into dish. Add fresh blueberries. Stir to combine. Bake for approximately 10 minutes.

2. WHILE mixture is cooking. Into a bowl add: pancake mix, milk, sugar, and melted butter. Stir together to combine.

3. Using a tablespoon, spoon mixture onto pie filling. Do not stir. Return dish to oven and bake for 10-15 minutes OR until top is golden and mixture is bubbly.

4. Allow mixture to cool slightly before serving.
