But, dude. Have you seen the sorts of additives and sodium levels invovled in a canned cup of tomato soup? Nasty. So along comes this simple version of tomato soup which tastes every ounce as good as the canned stuff (okay, eleven times better), is as fast as the canned stuff, but is so much more fresh tasting and free from additives.
Topped with sour cream hearts and a sprinkling of pepper, what easier way is there to show someone you care this valentines day?
- 2 (15 ounce) cans crushed or diced tomatoes
- 3 tablespoons tomato paste
- 1 tablespoon sugar, honey, or maple syrup
- 1 garlic clove
- 1 fresh sage leaf
- 1/4 cup whipping cream
In a blender, blend all ingredients together until pureed. Transfer to a medium pot and heat until steaming (but don’t let the soup boil!). Salt & Pepper to taste. Pour the soup into individual bowls, plop a dollop of sour cream in the center of the hot soup. Drag a knife gently through the center of the sour cream to create a little heart. Sprinkle with pepper. Serve & enjoy!
