Side Dish Simple: 10 Ways to Top Your Hasselback Potatoes

Whether your feeding two people for the holidays, or a room full of two-hundred, these super-simple, so-stunning, absolutely amazing Hasselbeck potatoes are a surefire hit.  You can make them in less than a minute, bake them in about and hour, pull them from the oven, serve & stun everyone at your dinner table.  They are the best side dish ever.  Easy, eyecatching, palate-friendly.  Of course, when you serve up your Hasselback potatoes, you might want to give them a little touch of twinkle.  No problem!  Here are 10 ridiculously simple & delicious ways to top your Hasselbeck potatoes in style.

#1 Parmesan-Herb Butter: In a small bowl, stir 1/4 cup butter, 1/4 cup grated parmesan, and 1 tablespoon of fresh herbs together.  Spoon over hot Hasselbeck Potatoes.

 #2 Sour Cream, Fresh Dill & Chives.  Spoon sour cream over fully cooked Hasselback potatoes.  Top with a sprinkling of fresh chives & dried or fresh dill for simple, sophisticated flavor.

#3 Garlic-Roasted Hasselbacks.  Tuck small, thin slices of garlic between a few of the Hasselback slices before baking.

#4 Spicy Hasselback Potatoes. Sprinkle potatoes with a hearty rubbing of cayenne pepper or cajun seasoning before baking.  Drizzle with

#5 Pesto-Topped Potatoes.  Spoon warm pesto sauce over potatoes.

#6 Nacho Cheese Potatoes.  For your holiday ham, or low-key game night get together, serve baked Hasselback potatoes with a cheddar cheese sauce spoon on top.  To make the sauce: In a medium pot, whisk together 2 tablespoons melted butter and  2 tablespoons of flour together over medium heat.  Slowly whisk in 1 cup of milk.  Continue stirring over heat until thickened.  Whisk in 1 cup extra sharp cheddar cheese until the mixture is smooth.  Top with fresh diced tomatoes, chopped olives, and sour cream, if desired.

#7 Sundried Tomato Hasselback Potatoes.  Just before serving, spoon a tablespoon of sundried tomatoes in oil over baked Hasselback potatoes.  Especially good when served with a splash of cream underneath the potato.

#8 Parmesan Crusted Hasselbacks.  Just before baking, mix together 1/2 cup grated parmesan, 1/2 cup breadcrumbs, and 1/4 cup butter.  Spoon over the top of the slices potatoes. Bake in an oven preheated to 425 degrees for 50-55 minutes.

#9 Bacon & Cheddar Hasselback Potatoes.  Twenty minutes before the baking time is over, remove potatoes from the oven, sprinkle with bacon & grated cheddar, then return to the oven for the remaining 20 minutes.  Makes a nice, crunchy-salty crust!

#10 Hasselback Potatoes Swimming in Browned Butter.  In a small skillet, heat 1/2 cup of butter over medium heat.  Whisk it until it melts, then continue to whisk just until the butter is browned.  Remove from heat.  Spoon over baked Hasselback potatoes as soon as they are removed from the oven.
