Need to make a quick appetizer that takes advantage of the best seasonal flavors? Try these little Caprese Bites with a pesto dipping sauce instead of the traditional basil leaf. They are fun and easy to make and will be devoured by your guests. Or whip up a leafy green salad and enjoy them for dinner with a glass of white wine! Here is the quick recipe for making these cute and colorful little bites:
- 1 container organic cherry tomatoes (I like the multi-colored variety) – cut in half
- 1 container of ciliegine mozzarella balls – cut in half
- 1/2 cup homemade or store-bought pesto
- Fancy toothpicks
To assemble take one half of a cherry tomato and one half of a mozzarella ball and put together with a toothpick so they form a complete circle. It’s best if you push the toothpick through the mozzarella side. Spoon some pesto on to a plate and arrange the Caprese bites on top of the pesto… or serve the pesto in a bowl for dipping.
