Simple Supper: Crunchy Chicken

We recently shared some SIMPLE SUPPER ideas. Now that it’s back to school and we’re busier than ever we need as many simple satisfying dinner options during our crazed week nights as we can get. This is a recipe that my husband likes to make for our kids. They request Dad’s Crunchy Chicken and he’s happy to oblige. It takes less than 30 minutes top to bottom. We serve them with our homemade SWEET & SPICY BBQ SAUCE as a dipping sauce. A great way to let the kids help with this recipe is to place the cheese crackers into a zip lock bag and let them smash the crackers with the back of a wooden spoon until they’re crushed.

Crunchy Chicken
What you’ll need:
2 large chicken breasts cut into 12 small strips/portions
salt/pepper
1 egg – beaten
1 1/2 cups cheese crackers – finely crushed

What to do:
1. Preheat oven to 400 degrees. Line a rimmed baking sheet with a silicon mat or parchment paper.

2. Place egg into a shallow bowl. Place crushed crackers into a separate shallow bowl. Season chicken with salt/pepper. Dredge chicken pieces into egg and then into crushed crackers. Making sure to evenly coat each piece. Transfer to cooking sheet. Continue until all pieces have been breaded.

3. Bake for approximately 20 minutes.
