Now that the holidays are over, I’m thrilled to leave the heavy stuff behind and prepare simple, fresh foods. Unfortunately, “fresh” and January don’t always go so well together. But with a little sleuthing, and creativity, there are a host of healthy options available. That’s how I came up with this surprisingly refreshing orange and parsley salad. Perfectly ripe oranges and healthy parsley are complimented simply with just a hint of salt and pepper. It’s a lovely little salad that pairs beautifully with a cut of meat or even just a yummy grilled cheese.
