Valentine’s Day means it’s pink season – all things sweet and pink are somehow fitting when it’s all about love, all the time. If you’re tired of cookies, whiz up a smooth, creamy strawberry lassi for breakfast or an after school snack. The popular east Indian yogurt drink is traditionally made with fresh mango and served to tame the heat of spicy curries, but there’s no reason other fruits can’t go for a dip. Sweet-tart strawberries are perfect, adding a dose of vitamin C and fiber along with that Valentines Day pink so many kids are yearning for.
Whatever fresh fruit you use, a lassi makes a sweet and refreshing drink, with the added bonus of calcium from the milk and yogurt. You may need more milk, depending on the thickness of the yogurt you use. If fresh strawberries aren’t available, use frozen ones, packed without syrup.
2 cups fresh strawberries, hulled and sliced
1 cup plain or vanilla yogurt
1/2 cup milk
1 cup ice
1 Tbsp. honey, or to taste
Combine all ingredients in a blender and pulse until the ice is crushed and mixture is smooth, adding more milk if the mixture seems too thick. Serves 2.
