Skinny Sweets: The Diet 7-Up Cake

I spotted this recipe the other day on the internet and was completely fascinated. It has been around for ages but I have never tried it. Is it really possible to make a low-fat cake with diet soda and yellow box cake mix? Turns out – it is! The result is a light, fluffy cake that is only three weight watchers points per serving. Of course, it is more points if you add frosting, I just decided to add a very light dusting of confectioners’ sugar instead. This is great answer to someone who is on a diet and in need of something sweet. It could even be served up for Thanksgiving or Christmas!

The Skinny Weight Watchers 7-Up Cake

1 box Yellow Cake Mix

1 can Diet 7-Up

1. Preheat oven to 350 degrees.  Spray a bundt pan with cooking spray and set aside.

2. Mix together the soda and cake mix until smooth. Cook for about 55 60 minutes, or until a cake tester comes out clean. Allow to cool for 10 minutes, then overturn the pan and extract the cake. Allow it to cool completely before slicing and serving.
