Sloppy Joe Muffin Cups 2 Ways

The other day my sister and I were reminiscing about a certain love song from our childhood, “LunchLady Land” by Adam Sandler. What?! You say it’s not a love song?! Au contraire; it may make you laugh, but did you know that the lunch lady ends up married to good ol’ Sloppy Joe and they’ve got six kids together? Their romance isn’t the only love that comes from this song; it also sends me into a full-blown affair with sloppy Joe’s. Oh, how I love this guilty pleasure food and I have NOT been able to get the desire to eat said food out of my head for a week. I decided to step this recipe up a notch and create handheld muffin cups. It worked out perfectly in my new-mom state as my newborn had no interest in allowing me to use both hands to eat. I just picked up a sloppy joe muffin cup and dug in while holding the baby in the other. The older kids followed suit. Fun was had my all and my mouth was fully satisfied. Sloppy Joe Muffin Cups

1 lb 90% lean ground beef (you can use lean beef because it’s covered in saucy goodness)

1/2 onion chopped

1 green pepper chopped

2 cloves of garlic crushed

1 can tomato sauce

2 tablespoon tomato paste

1 tablespoon worcestershire sauce

1/4 cup loosely packed brown sugar

1/2 teaspoon dry mustard

fresh ground salt and pepper to taste

whole wheat hamburger buns

refrigerator biscuits (w/o hydrogenated oils, either Trader Joe’s or find the market brands don’t have HO)

Place the ground beef in a large skillet and cook over medium until brown, drain off any grease. Add the onion and pepper and cook until just softening, add the garlic and cook for a minute. Pour in the tomato sauce and paste, worcesertshire sauce, brown sugar, dry mustard and salt and pepper to taste. Cook for 10 minutes over low heat. Preheat oven to 350. Spray a muffin pan with cooking spray. Remove the biscuits from the package and press each one with your hands to flatten and create a large disk. Gently press into muffin pan (there should be 8). Now open the hamburger buns and take a rolling pin and roll flat, then place in the remaining muffin tins. Scoop some of the meat mixture into each muffin cup until full, then bake for 15 minutes or until golden brown.
