I am ALL about the slow-cooker this year. With the weather turning cooler and baby on board I need hot food on the double at dinner time that I can easily prepare in advance. This recent addition to our slow-cooker repertoire was inspired by intense cravings for spicy food and my need for something that was super easy to prepare in advance on a busy day.
To make the soup I simple completed the simple preparation step of broiling the onions, garlic, and tortillas, in the morning and left it to cook all afternoon. That evening we served it with some simple slices of avocado, cheese, and more chips and it was the perfect soup for a cool fall night!
