My daughter is playing soccer this season and I have snack duty twice. I wanted to do healthy and fun so I conjured the Soccer Power Cookies. The girls thought ‘ooooh cookies’, and the parents thought ‘eat up!’ And eat ‘em up they did, parents and kids alike. In fact, I need to double my batch for next time. Note: I’m not a health fanatic so I did incorporate chocolate covered raisins into this otherwise healthy, packed with energy meal in a cookie. Soccer Power Cookies Recipe
4 T butter, softened
1 cup applesauce – natural, no sugar added
1 ripe banana smashed (little more than 1/2 cup)
¼ cup loosely packed brown sugar (basically just get a 1/4 cup scoop of brown sugar without packing it in)
2 tablespoons agave syrup
1 t vanilla
3/4 cup whole wheat flour
1 1/2 cup oats
1/2 cup almond meal (finely ground almonds)
3 tablespoons fresh ground flax seeds
3/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chocolate covered raisins (I got some at Trader Joe’s that don’t have the hydrogenated oils or high fructose corn syrup)
Preheat oven to 350 degrees F and lightly spray two baking sheets. In the bowl of an electric mixer combine the soft butter, applesauce, smashed banana, brown sugar and agave syrup. Mix on medium until combined, about 1 minute (it will not look smooth). Add the eggs and vanilla and mix for another minute. In a separate bowl whisk together the whole wheat flour, almond meal, ground flax seed, baking powder, and salt. Slowly add to the wet ingredients with the mixer on low. Once the dry ingredients are incorporated add the oats and mix for 30 second on medium low until all ingredients are combined. Add the chocolate covered raisins and stir in by hand. Drop spoonfuls onto the baking sheet the same way you would do with a regular cookie dough. Alternatively, these can be baked in greased mini muffin pan too. Bake for 12 minutes or until golden brown and top springs back when touched. Makes 24.
* At the game I served these with fresh fruit (watermelon, strawberries, pineapple, and oranges) and lemon water.
