Strawberry season is here, and with the strawberries come warm weather. Thrilled for it to finally warm up, we instantly planned a picnic, made a few pasta salads and invited our friends over for a barbecue.
2 cups water
1 cup granulated sugar
zest from one lemon (zest one prior to juicing below)
2 cups strawberries
1 cup fresh-squeezed lemon juice (6-8 lemons)
2-3 cups club soda
Add water, sugar and zest of one lemon to a small saucepan. Simmer over medium heat until all the sugar is dissolved. Remove from heat and allow to cool.
Wash and halve strawberries and then add them to a food processor or blender. Blend well. Using a fine sieve or strainer, push the strawberry pulp into a separate bowl to remove seeds and any large fruit chunks.
Add your strained strawberry purée to a pitcher along with your lemon juice. Mix in your simple syrup. Add 2-3 cups of club soda and stir to combine. Chill in your refrigerator until ready to serve.
Makes 5-6 cups sparkling strawberry lemonade.
