Spicy Ginger Mango Salad
Serves: 2 – 4
Prep time: 10 minutes
1 large mango, peeled and cut into 1/2-inch chunks
1 teaspoon minced ginger
1 tablespoon lemon juice
1 tablespoon honey
1 tablespoon extra virgin olive oil
pinch each sea salt, black pepper, and ground cayenne
1 tablespoon cilantro
1/4 teaspoon red pepper flakes
In a small bowl, combine the ginger, lemon juice, and honey. Whisk in the olive oil with a fork. Add the salt, pepper, and cayenne.
Toss the dressing over the mango chunks, fold in the cilantro, and finish with the red pepper flakes.
