Are you looking for a healthy, crunchy snack with a little spicy kick? These spicy little chickpeas are just the thing. I used chipotle chili powder to add some heat, along with some heart healthy olive oil. Then I roasted them until they were very crunchy. Be careful when your roasting these little guys though. I checked mine a few times during the cooking process, to shake the cookie sheet and move them around so they would brown evenly, and a few of them popped like popcorn. They could burn your hands or arm if your not careful.
Spicy Roasted Chipotle Chickpeas
1 – 15 oz can chick peas (garbanzo beans) rinsed and drained
2 tablespoons olive oil
1/2 teaspoon chipotle chili powder
salt and pepper
1. Preheat oven to 450 degrees. Combine chickpeas with olive oil, chipotle powder, salt and pepper. Toss well to coat and spread in a single layer on a cookie sheet.
2. Roast at 450 degrees shaking the pan or stirring peas a few times during the cooking process to ensure even browning. Roast for 30 – 40 minutes, or until crunchy and brown.
