Stuffed mushrooms have been a favorite party appetizer for years. There are so many variations, but this wonderful recipe by The Luna Cafe included many of the flavors you would expect to find in a savory Thanksgiving stuffing. This time of year I start craving cooler temperatures and comfort food, so I just had to try this recipe. The mushrooms are easy to make and have so much flavor from fresh herbs, spicy chorizo sausage and parmesan.
I modified the recipe slightly by making my own sourdough bread crumbs in lieu of the panko bread crumbs. And I deglazed the pan with a little white wine instead of apple cider vinegar. Chorizo was my sausage of choice instead of Italian sausage. They were delicious and the perfect morsels of comfort to serve while watching the Olympics.
