In many places in the country, the beginning of spring means delicious ramps. They tend to be the first seasonal greens to pop up during the spring. These delicate and delicious greens are like a cross between a leek and a spring onion. They are also used as a substitute for garlic. The flavor is heavenly, fresh and reminiscent of spring.
Last year, my friend Chef Viviane Bauquet Farre came up with this delightful recipe that included a few of my favorite foods… ramps… goat cheese….lemon zest and phyllo dough. The result was a beautiful and savory appetizer.
