Spring is in the air. Can you feel it ; ) Soon there will be blossoms of all types everywhere. When I think of blossoms, my mind doesn’t go to tulips, or roses, it wanders off to dream about SQUASH blossoms! They’re not only beautiful {I mean just look at those colors} BUT they are also edible. Yes, edible!

I plant extra squash in my garden each year just so I can enjoy the blossoms! You can eat them {once cleaned of course} on their own or stuff them as we’ve done here.

They can be stuffed with either savory or sweet fillings! I’ve found the best way to stuff these delicate beauties is with a pastry bag {or a plain zip lock type bag will do the trick in a pinch} They make a beautiful savory appetizer or a sweet dessert treat.
