There is nothing that says St. Patrick’s Day quite like the color green. Admittedly, cupcakes are not such an Irish food, but we made them Irish in our own way. First, we added a drop of green food paste to dye them green, and then I added chocolate chips for a sweet kick. I am not a hugely skilled cupcake decorator so I stuck with pretty white frosting that would look great with sprinkles on top! While they may be more commonly found at a bakery in New York than in the rolling hills of Ireland, they are still Irish to us!
St. Patrick’s Day Chocolate Chip Cupcakes
1 box vanilla cake mix
2 drops green food paste
1 cup semisweet chocolate chips tossed with 1 teaspoon all-purpose flour
1 jar vanilla buttercream frosting
1. Prepare the vanilla cake mix according to instructions and add two drops green food paste to make them green colored. Then, stir in the chocolate chips that have been tossed with the flour.
2. Fill the cupcake tin according to directions and bake as directed.
3. Frost with even amounts of the buttercream frosting, dip in sprinkles and serve!
