Happy St. Patrick’s Day! Around here, we’re marking the occasion with a host of naturally green St. Patrick’s inspired dessert recipes, including these ultra green St. Patty’s cupcakes. I love festive foods, but because I worry about artificial dyes, I’ve made a big effort to give my kitchen a natural makeover. And, with just a bit of tinkering, I came up with this easy recipe for these very green, and super tasty, cupcakes.
Healthy kale gives these green cupcakes their color, and with olive oil and a bit of sugar, they have a wonderful crumb and delicate, light texture. Though they’re really tasty all by themselves, I topped them with a dollop of buttercream frosting and these naturally green sugar sprinkles.
To make, simply use this green cake recipe, spoon into a muffin tin fitted with cupcake liners (this should make 9 – 12 cupcakes), and bake for 20 – 25 minutes, or until a toothpick inserted in the middle comes out with just a few crumbs attached. Once cool frost with this buttercream recipe (if desired), and these festive green sugar sprinkles.
