Thinking of fun St. Patrick’s Day food to make with kids can be tough. We love to make Shamrock Shakes by the dozen. But after that we are kind of at a loss. So, this year we thought it would be fun to make our favorite chow recipe and serve it up for Leprechauns. My daughter is fairly sure a bowl of this left out will actually attract the little elves to our house. I don’t want to disappoint her, but I don’t think this will attract much if left on the front porch. Oh well, it can’t hurt to try!
St. Patrick’s Day Leprechaun Chow
5 cups Rice Chex Cereal
1 cup creamy peanut butter
12 ounces chocolate chips
1 cup confectioners’ sugar
2 cups green M&M’s
1. In a glass bowl melt the peanut butter and the chocolate chips together until completely smooth. Then stir in the Rice Chex cereal until completely coated.
2. Sprinkle the confectioners’ sugar over the Rice Chex and shake it into the mix until the mix is well coated. Toss in the green M&M’s and serve!
