Stacked Roasted Vegetable Enchiladas

Let me show you what I’m making for dinner tonight…. (see above.)  I haven’t stopped thinking of making it since I found this recipe (and gorgeous photos) on Perry’s Plate about a month ago. Plus, I became a big fan of the Perry’s Plate food blog and I went out and bought the cookbook in which this recipe was inspired.

The variations of this are endless. Although the flavors are like an enchilada, it’s a bit more like a lasagna in preparation. I will probably add some shredded chicken to mine. A rotisserie bird from Whole Foods would be a fast and good quality addition. And I’ll get some queso fresco cheese to crumble on top after it comes out of the oven.
