Breakfast burritos are one of my kids’ favorites because they think they’re eating lunch or dinner for breakfast. I guess they kind of are, but we fill them with breakfast stuff to give them a healthy start to their day. Sounds great, right? It’s almost perfect save for the trail of eggs and sausage my kids leave behind on the table and floor. But the clean up is a tiny price to pay for their joy in eating these delicious breakfast alternatives. The ingredients of eggs and cheese aren’t original, but I figured out a way to make it stay in the tortilla, even with my wild toddler thrashing about. Stay Put Breakfast Burrito Recipe
1 egg white
1/8 cup milk
1 to 2 veggie sausage patties (we love Morning Star Farms) defrosted and crumbled
1/4 cup shredded cheese
Salt and pepper to taste
2 soft taco sized tortilla’s
(optional – your favorite add-ins)
Thoroughly whisk the eggs, milk and salt and pepper. Pour into preheated small sauté pan and cook over medium low heat. Do not stir. Sprinkle the sausage and cheese evenly and cover with a lid. Cook for 3-5 minutes or until mostly set, the top may be a bit runny. With a spatula gently loosen the entire edge and flip without breaking into pieces. Cook for an additional minute or two. Remove from the pan in one solid piece and cut in half. Place each half into a tortilla and roll up. Serves 2.
