I love this meal because…look at that piece of steak? Would you ever think that 3/4 pound piece could feed a family of four? We have been trying to cut back on red meat in our house (cholesterol issues) but it’s hard because it’s one of few things everyone at the table categorically loves. The solution these days is to stretch it out with salads and tacos — as with all good things, a little goes a long way.
To make: Fry a strip steak over medium-high heat about 4-5 minutes a side depending on thickness of the cut. Meanwhile, prepare your salad — chopped tomatoes, thinly sliced red onion, parmesan (feta or blue cheese work, too), steamed green beans and bibb lettuce. Toss with a simple vinaigrette. (If you feel up to it, whisk in some horseradish to the dressing — a classic steak salad move.) Slice your steak as shown and serve on top (or separated far, far away from if your kid is like mine) the salad.
