It’s never too soon to start thinking of the back-to-school breakfast hour. This dreamy orange smoothie is inspired by flavors of an endless summer: citrus, peaches and tropical bananas. I call it The Straight A Smoothie – not because it has magical test-passing powers, but because it has a nice dose of the antioxidant Vitamin A and Vitamin C – and potassium – and fiber… With this A-infused smoothie, you won’t need to bite your fingernails over whether or not your kids are consuming all their baby carrots you packed in their lunch. Vitamin A is good to go!..

A new school year is just around the corner, so it’s about time you start prepping for those busy morning, breakfast-on-the-go send-offs. You’ll need a few easy, delicious AM recipes up your sleeve to send them off feeling energized and satisfied for the school day ahead. And it’s never too soon to start serving them “grade A” smoothies in the morning – so you can certainly serve this up now!

Nutrition Facts: One large peach has about 11% adult RDA of vitamin A. One cup of OJ has about 10% RDA. And 1 cup nectarine slices also around 10% RDA.  data – peaches

Complete Breakfast. Serve this smoothie along side a quickie breakfast sandwich or toast and peanut butter. Or perhaps alongside some nutty granola cereal or even hot oatmeal drizzled with maple syrup and cinnamon.

Straight A Smoothie
makes two servings, vegan

1 cup fresh squeezed orange juice (about 3-4 oranges)
1 small fresh peach
1/2 fresh nectarine
1 cup frozen banana
1 tsp apple cider vinegar
2 tsp maple syrup
1/4 cup ice
optional: 1/2 cup vanilla yogurt (soy)

Blend and serve!

Seasonal Ingredient Note: If you do not have fresh peaches or nectarines here’s what you can do: swap the frozen bananas for a fresh banana. Then swap the fresh peach and nectarine for frozen peaches.
