Have you tried flatbread pizzas? I made my first a few weeks ago and have been hooked ever since. In just minutes, you can whip up a fun and tasty whole grain pizza with any assortment of toppings. For these pizzas, I was inspired by the springtime weather and decided to try a more creative approach with fresh strawberries, spinach, and feta cheese. My daughters loved the sweet and savory combination, spinach and all!
For any type of flatbread pizza, my approach is the same – drizzle the bread with olive oil and add your favorite toppings. Flatbread pizzas make for fast healthy dinners that you can tailor to each family member’s tastes.

Strawberry Spinach Flatbread Pizzas
4 8-inch whole wheat flatbreads or pita pockets
1 cup strawberries, sliced
2 cups spinach leaves
4 tablespoons olive oil
4 teaspoons balsamic vinegar
sea salt as needed
fresh-ground back pepper to taste
1 cup crumbled feta cheese
1 tablespoon shallot, minced (optional)
Preheat the oven to 450 degrees.
Slice the strawberries, spread out on a wooden cutting board, and sprinkle with a few pinches of sea salt. (This helps pull out some of the liquid before cooking.)
In a small bowl, whisk the balsamic and a good pinch of sea salt into the olive oil, and brush onto the flatbreads so that each one is coated nicely. In a small bowl, drizzle a few tablespoons of dressing over the spinach and then arrange a handful on each flatbread. Scatter the strawberries, feta, and shallots, and finish with several twists of fresh-ground black pepper.
Put flatbreads on a rimmed baking sheet and bake for approximately 7 minutes, or until the edges have crisped up and are golden brown. Note that the feta will not melt, so the cheese isn’t a great gauge of done-ness.
Cool for a minute, slice, and enjoy!
