As we continue our frozen fruit cubes recipe creations my daughter had the brilliant idea to combine strawberries and kiwi. Ok, so she wasn’t the first person to come up with this combo, but she’s so proud! We mashed the strawberries by hand to make it a fun hands-on (literally) cooking adventure. What we were pleasantly surprised by was how chunky the melted cube made our sparkling water. We ditched the straw in favor of sipping our fruit chunks. Yum and cooled us off after a hot game of soccer in the yard.
Strawberry Kiwi Cubes
1 pint of strawberries washed and mashed by hand
1-2 tablespoons of sugar
Smash the strawberries and place in a glass measuring cup with a spout and add a tablespoon of sugar. Peel the kiwi and cut both ends off. Stand it on end and slice down the center, but not all the way through, repeat until the kiwi is sliced into 6 pie slices, but still connected on the bottom. Lay the kiwi down and slice thin slices. Now you have even pieces of kiwi to distribute! Stir and taste to see if you need more sugar. Now pour into your ice cube trays and freeze for at least 5 hours.
