I can already feel it, that longing to prep my thighs for bikini season. The weather is warming (though not nearly fast enough…we woke to snow this morning) and my belly is craving all sorts of light, natural foods. I ate a lunch of Bok Choy stirfry yesterday and today for lunch I devoured a bowl full of this tropical, fruity salsa which hit the spot quite nicely while minimizing it’s impact on my thighs. Thank goodness for that, because the snow is dripping from the rooftop and it seems bikini season is most definitely on it’s way.
Strawberry Mango Kiwi Salsa
- 6-8 large strawberries, cleaned with greens snipped off
- 1 mango, peeled and sliced
- 2 kiwis, peeled and cut in half
- 1/4 vidalia onion
- 1/4 cup cilantro, packed
- juice of 1 lemon and 1 lime
- 1/2 tablespoon salt
Place all ingredients in a food processor. Pulse just until fruit is finely chopped but not pureed. Serve with multigrain tortilla chips, over grilled chicken, or on top of your favorite fish tacos. Enjoy!
