The beauty of cooking with fresh fruit in the summer is that it really needs very little preparation. The fruit is so sweet and the flavors really shine on their own, so why bother baking them and stewing them in endless amounts of sugar (unless you are making jam, of course). This tart is one of our favorite summer desserts because it is SO easy. The longest part is baking the puff pastry, then it is a matter of layering on toppings and serving it up. For this tart I chose to add a generous layer of nutella over the thin layer of creme fraiche, then top it all with some freshly sliced strawberries. This recipe is incredibly versatile and you should feel free to adapt the toppings as you see fit. Mascarpone is a great stand-in for creme fraiche and you can omit the nutella, or use a different spread if you’d like. I’ve also made this with raspberries and blueberries, or a mix of the two!
Strawberry Nutella Tart
1 sheet of puff pastry, freshly baked
2 tablespoons creme fraiched
2 tablespoons nutella
1 cup fresh strawberries, washed, hulled and sliced
1. Bake the puff pastry and allow it to cool until it is about room temperature. Spread the creme fraiche and nutella on top, leaving a 1/2 inch border around the edges. Layer the sliced strawberries on top. Serve.
