I usually wait until later in the season to make my first pie, holding out for cherries or peaches. But this year, I decided to take the plunge and try my hand at a simple, classic strawberry pie recipe. As luck would have it, the resulting pie was perfect and delicious. The rustic lattice crust was flaky and crisp and the strawberry filling, made with arrowroot and tapioca instead of cornstarch, was brimming with the bright, lightly sweet flavor of ripe strawberries.
Making your own crust can be really simple once you get the hang of it, so even if you’re new to homemade crusts, I hope you’ll give one a try. The flavor really can’t be beat. If you are a novice, try adding extra water until the dough is easy to handle. Use parchment and plenty of flour to roll it out and you should be just fine!
