Spring is here, and it brought fresh greens and fruit with it. This strawberry and spinach salad highlights the produce of the season, and it works perfectly with a few bacon-wrapped chicken tenders because everything is better with bacon.
While I love the late days of summer when the air is hot and the produce flows out of every nook and cranny of the farmers market, there’s something invigorating about the spring air and watching the world wake up from a loooong sleep. If you live where I do, that sleep was very long this year, so spring is even more welcome.
Strawberry Spinach Salad
4 cups spinach leaves
1 cup strawberries, sliced
1/4 cup red onions, thinly sliced
1/4 cup goat cheese, crumbled
vinaigrette (adapted from Epicurious):
1/2 cup sliced hulled strawberries
2 tablespoons Champagne vinegar
1 tablespoon sugar
a pinch of salt
Layer spinach, sliced strawberries, onions and cheese in a large bowl. In a blender puree strawberries for vinaigrette and blend in Champagne vinegar, sugar and salt. Pour vinaigrette over salad fixings and serve alongside bacon-wrapped chicken tenders or on its own. Fresh and delicious.
