It was late afternoon. Stuffy in my workspace. The sun had been beaming through my window – a dry heat – all afternoon long. I wasn’t hungry. I wasn’t thirsty. But I was craving some refreshment. Maybe I just need some fresh air? Nope. Maybe a stroll? Then suddenly it hit me. A smoothie! I had not made a smoothie in a good few weeks (crazy for me, right?) So I tossed some of my faves in the blender and sipped and slurped down that tall frosty smoothie. Yup, just what I was craving! Maybe it is what you are craving too. Try my antioxidant-rich Strawberry Acai Refresher Smoothie. And don’t worry, if you don’t have acai – you can easily sub with blueberries…
Strawbery Acai Smoothie Refresher
vegan, serves 2
1 1/2 cups non-dairy milk (soy, almond or hemp)
3/4 cup frozen organic strawberries
1/2 cup frozen banana slices
1 small fresh banana (or 1/2 large)
1 frozen acai smoothie pack (or 1/2 cup acai juice + 1/4 cup ice)*
1 Tbsp maple or agave syrup
optional: 1/2 cup coconut water ice cubes
Blend and serve.
*if you do not have acai, you can sub with frozen wild blueberries
