The first time I ate fresh beets, I thought they were the most brilliant thing that the ground had ever produced. They had the taste of some sweet desirable earthy flavor that I had never bit into till that day. I quickly started buying them in a pretty rainbow of colors and making them for salads. This salad is what I like to think is the perfect summer salad paired with cucumber and watermelon, and then dressed in pistachio,mint, blue cheese, and honey lime dressing.
