Summer tomatoes can’t be beat. I used sweet yellow cherry tomatoes for this salad – but you can use whatever tomatoes are freshest at your store or Farmer’s Market. Cherry tomatoes work well because they have a hearty bite and a sun-kissed sweet flavor.
Use a good rich balsamic for this salad. Something with a bit of body. The basil should be fresh and fragrant.

Summertime Salad: Tomato Basil Bean Balsamic
2 cups cherry tomatoes, quartered
1 1/2 cups beans – any variety (I used garbanzo)
1/4 cup fresh basil, chiffonade
1/4 cup balsamic vinegar
fresh black pepper
2 Tbsp of EVOO
1/2 cup red onion, diced
Toss well and serve.
