Yesterday, when it was chips-and-salsa hour, a time of day known to most humans as “Six o’clock” I reached for my Trader “Jose’s” Salsa Autentica only to find that we were down to a few drops of the stuff. What I had in spades, though, was a nice sampling of yellow and red cherry tomatoes from the farmer’s market and some fresh peaches whose skins were at that wrinkly stage where you can just peel it right off with your fingers. I chopped all of the fruit up (both red and yellow tomatoes) tossed in what was left of the salsa, added a tablespoon of chopped cilantro and two chopped scallions. Let me just say that it was the happiest, summeriest salsa hour we’ve had all year. I’ll be making it on purpose tomorrow night.
