Sun Dried Tomatoes

After a trip to Costco today, I brought home a large jar of sun dried tomatoes. I set it on the counter, and as I left to get my son from school, I glanced over and saw it there—all two pounds of it, and my heart leapt—just a little bit. It’s been so long since I bought them, and I forgot how happy they make me.

Tomatoes are a great source of lycopene, antioxidants, and vitamin C. Once they’re dried, they till retain their nutrients. But the best part about them is the taste. The flavor is so concentrated, and so sweet, they make a great addition to homemade pizza, pasta, or ground up in the food processor to make a sun dried tomato tapenade.

Our Costco carries a large container of the julienned version, which makes chopping them extremely convenient, however, you can also find the tomato halves variety. Ask you local grocer. When I don’t want a huge jar of them, I’ve been able to find them at Super Target in the produce section.
