It’s time, baby! The teams are set. The game is on. Vegas is all a buzz as the Super Bowl odds are being assessed and debated. And, me? I’m menu planning! I’ve already picked a handful of foods that make perfect football snacks that double as dinner. And, to round things out, the Super Bowl odds are in favor of these Smoked Paprika Parsnip Chips over plain BBQ potato chips any day.
These couldn’t be easier to make, are totally delicious — way better than anything out of a crinkly bag — and will give your party a touch of class. But not too much! This is classic football fun, after all. And these smoky, crispy treats will satisfy even the most die-hard, football-watching, potato-chip-eating fan.
Smoked Paprika Parsnip Chips
makes about 3 cups chips
3 large parsnips
3 Tbsp olive oil
1 tsp sherry vinegar
2 tsp smoked paprika
1. Preheat oven to 325. Scrub parsnips clean and trim both ends. Thinly slice into rounds. (This is best done with a mondolin.)
2. Toss sliced parsnips with olive oil, vinegar and paprika. Spread in a single layer on a cookie sheet and bake for 25 minutes. They will crisp up more after being out of the oven for a few minutes.
