Super Quick Dinner: Bacon & Potato Soup

Looking for the perfect quick comfort food? Here is a recipe that our family turns to time and time again. No matter how cold it is outside, you’ve got five minutes to toss together this deliciously easy soup. It’s uber creamy, with the bite of bacon and sharp cheddar. Totally delish! Totally a classic!

Quick Bacon & Potato Soup

12 red potatoes, microwaved just until soft
1/4 yellow onion, diced
1/2 cup bacon bits
3 tablespoons butter
3 tablespoons flour
2 cups of milk
1 cup spinach
1/2 cups of sharp cheddar cheese, shredded
salt to taste
pepper to taste
Melt butter into the bottom of a medium pot add the onion and cook until softened.  Then, whisk in the flour. Whisk in the milk, cooking on low to medium heat, until the mixture becomes thickened. Add the bacon bits. Then, slice your microwaved potatoes, dice them, and toss them into your pot. Stir in the spinach. Add salt and pepper to taste.  Serve topped with cheese and enjoy!
