One of our favorite scenes in Finding Nemo is the time when the sea turtles are surfing on the warm ocean current toward Australia. They are so relaxed and happy! Those warm ocean currents inspired this warm baked oatmeal as part of Disney’s Magic of Healthy Living – Dishes Inspired by Disney Campaign.
It is an easy make-ahead breakfast recipe that would be perfect for parents to make for their kids any day of the week. We love making this dish for breakfast because it is a delicious, healthy way to start off a cool fall morning. Sometimes my daughter even has some extra fun with it when I put out a selection of toppings. She scoops some into her bowl and adds anything from fresh berries, to chopped nuts, to dried fruit!
Hot Baked Oatmeal
3 cups old-fashioned rolled oats
1 teaspoon baking powder
1/2 teaspoon kosher salt
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
1 tablespoon unsalted butter, melted and cooled
2 cups 1% milk
3 tablespoons raw sugar, plus more for garnish
Berries or chopped fruit for garnish
1. Preheat the oven to 375 degrees F. Lightly butter the bottom and sides of a 2 quart baking dish and set aside.
2. In a large bowl toss the oatmeal, baking powder, salt, cinnamon, nutmeg, and ginger. Spread this evenly into the prepared baking dish.
3. Whisk together the cooled butter, milk, and sugar. Pour it evenly over the oatmeal and press it down so the oats are nearly all submerged in the milk.
4. Bake the oatmeal for 40 to 45 minutes, or until the oatmeal is light brown around the edges. Then allow it to cool slightly. Serve with chopped fruit and a drizzle of maple syrup.
