I am certain that if Edward Cullen did in fact eat, he would dive into this Sweet Deep Red Salad, aka the Twilight Salad. With all the Harry Potter movie buzz, it’s easy to forget that the next Twilight film: Breaking Dawn Part One is in fact just a few months away. You’re excited too right? OK, so really, this post isn’t about a movie. It’s about a salad. A darn good salad. With deep red colors throughout.
The flavors: velvety purple figs, juicy sweet black plums and tender baby beets – cubed and soaked in deep black balsamic vinegar, olive oil and fresh thyme. Fresh cracked black pepper on top. Eat as is or pour over some fresh, spicy arugula greens. Why the Twilight reference? Well, when I made this salad my husband joked - this looks like a salad a vampire would love! Ha. Healthy Bite. Not only is this salad delicious and fun, it’s healthy! Lots of antioxidants in those deep red and purple colors. Kids will love this deep red mess!
Sweet Deep Red Salad, aka the Twilight Salad
1 1/2 cups baby beets, ready-to-eat, chilled & thinly sliced
2 black plums, cubed – chill ahead of time
4 figs, quartered or halved
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
1/2 tsp fresh black pepper
1 tbsp finely chopped fresh thyme
garnish: pepper & thyme sprigs
4 cups arugula – optional
1. Prep your beets, plums and figs.
2. Add to large bowl and add in olive oil and vinegar. Allow to marinate for at least ten minutes.
3. Serve on plates – or pour red mixture over top arugula in salad bowls.
Garnish table with purple flowers .. you know, for Bella. She likes that purple flower field.
